Roasted Acorn Squash Soup

chicken broth (full salt)

Instructions
Heat a stock pot over medium heat- add onion, garlic, squash, olive oil, apple. Sauté for 10 mins until contents are soft and warm.
Add the herbs. Continue to sauté for 2-3 mins.
Add liquid. Continue to cook on medium heat, until it’s visibly hot. Then simmer for 10-15 minutes.
Blend or food process. It shouldn’t be super thin liquid, but should have a bit of texture.
Serve and enjoy!
