Roasted Acorn Squash Soup

  • 1 onion, chopped
  • 1 tbsp garlic, minced
  • 1 clove garlic
  • 1 cup roasted acorn squash
  • 1/2 apple, chopped
  • 1 tbsp olive oil
  • 3 sprigs thyme
  • 1 sage leaf
  • 3/4 cup water
  • 3/4 cup chicken broth (full salt)
  • salt & pepper


  • Heat a stock pot over medium heat- add onion, garlic, squash, olive oil, apple. Sauté for 10 mins until contents are soft and warm.
  • Add the herbs. Continue to sauté for 2-3 mins.
  • Add liquid. Continue to cook on medium heat, until it’s visibly hot. Then simmer for 10-15 minutes.
  • Blend or food process. It shouldn’t be super thin liquid, but should have a bit of texture.
  • Serve and enjoy!
