Hello comfort food! We love our simple rendition on this classic dish.

Ingredients
1tbspolive oil
1cupcarrots, chopped
1mediumyellow onion, chopped
1/2cuppeas (optional and frozen)
3clovesgarlic, chopped
2 lbsground turkey
4sprigsbay leaf
1tsponion powder
pinchsalt
pinchpepper
For the cauliflower topping
2headscauliflower, steamed
1tbspcoconut oil
1clovegarlic, minced
dashpepper
dashsalt
Instructions
Preheat the oven to 400 degrees
Wash and prepare ingredientsI
In a large skillet heat the oil, and add the carrots- cook until soft (about 5-7 minutes)
Next add the onion and cook until soft- about 7-10 minutes, add the frozen peas about mid way through this process
Once the carrots etc are cooked, add the bay leaf, the turkey and the rest of the salt/seasoning and cook until meat is cooked through (about 10 minutes)
While the meat is cooking, steam the cauliflower
Once the cauilflower is steamed, add to a food processer with the rest of the topping ingredients and blend until smooth
Once the turkey mixture is cooked remove from heat
Spray a 9 x 9 pyrex dish or other with olive oil spray or rub with olive oil
Add the turkey mixture in first, and then the cauliflower whip on top and spread evenly
Cook at 400 for 20 minutes, then broil for 7 minutes or so until browned
