Asian Chicken Salad

I love this simple Asian Chicken Salad. I made it on a whim, on an evening when I needed something really super easy. This salad is made from 3 simple ingredients- boiled chicken, broccoli and carrot slaw, and a DELICIOUS sesame ginger dressing from Momo Dressing.

Ingredients

  • 2 cups broccoli/carrot slaw use a spiralizer and about 5 carrots and 2 STEMS of broccoli- spiralized- or buy it, like I do from Whole Foods
  • 2, 3-4 oz chicken breasts boiled (to boil- cut into 2-inch pieces and simmer in boiling water until completely white and cooked through- about 15-20 minutes)
  • 3-5 Tbsp of your favorite ginger sesame dressing
  • Optional- other veggies & produce- like scallions tomatoes, jicama, kale, avocado

Instructions

  • In your serving bowls, place 1 cup of the slaw- in each bowl.
  • Add your chicken to the slaw - about 1 breast for each bowl.
  • Divide the dressing and mix together with the salad- for each portion.
  • Add any of your own produce that you'd like!
  • Serve and enjoy!
