Simple Roasted Branzino and Vegetables Recipe

I love easy, healthy meals like this one. This simple roasted branzino and vegetables (and brussels too!)- is easy, it’s clean and it’s simple to prepare. This dish is loaded with healthy nutrients, protein and fiber- and will leave you feeling satisfied too. Try to load up on the veggies and have fewer potatoes if you can!

I would recommend buying the fish already off the bone (it’s easier to work with and it’s also tastier to eat I think!). If you want to swap out any of the veggies you’re welcome to do so as well. Enjoy this easy fish and veggies dinner- it’s the perfect way to have an easy meal or kick off a clean eating weekend!

Simple Roasted Branzino and Vegetables Recipe

Prep time: 15 minutes

Total time: 45 minutes

Makes: 2 servings

Ingredients:

Branzino:

  • 1 Tbsp olive oil
  • 2 whole branzino fish, filets
  • Salt and pepper to taste
  • 1/2 lemon, sliced

Potatoes:

  • 1/2 lb (about 1 cup) small round potatoes, halved
  • 2 tsp olive oil
  • salt and pepper to taste

Brussels sprouts:

  • 1 cup brussels sprouts, halved
  • 1 tsp olive oil
  • Salt and pepper to taste

Spinach:

  • 2 cloves garlic, chopped
  • 1 tsp olive oil
  • 2 cups spinach

Directions:

For the branzino:

  1. Preheat the oven to 400 degrees.
  2. Heat a medium/large frying pan over medium heat and add the olive oil.
  3. Salt and pepper the fish (both sides).
  4. Place the fish filets skin down in the heated pan and cook for 3-5 minutes (until browned).
  5. Then transfer the branzino to a baking sheet and bake in the oven for 10 minutes.
  6. After 10 minutes remove from oven and set aside.
  7. Serve with a lemon wedge!

For the potatoes:

  1. Wash and half the mini potatoes.
  2. Place the potatoes into a small baking pan (or on a baking sheet)- and toss with olive oil, salt and pepper.
  3. Place into the oven and bake at 400 (same temperature as the fish above)- for 15 minutes, stir and mix together then cook for another 15 minutes- should be browned.
  4. Remove from the oven and set aside.

For the brussels sprouts:

  1. Wash and prepare the ‘sprouts.
  2. Toss together in a baking pan or on a baking sheet with olive oil, salt and pepper.
  3. Place the pan into the oven and bake at 400 (same as fish, above), for 20-30 minutes or until browned and soft.
  4. Remove from oven and set aside.

For the spinach:

  1. Chop the garlic cloves and set aside.
  2. Wash and prepare the spinach.
  3. Heat a medium saute pan over medium heat, add oil and add the garlic- saute for 1-2 minutes.
  4. Add the spinach next and lower the heat to medium/low.
  5. Mix together every few minutes until spinach is wilted- add salt and pepper.
  6. Remove from heat.
  7. Serve and enjoy!
