Happy Sunday! There’s nothing like a delicious rainy, cozy day dinner, so try making this easy sweet potato crust pizza tonight… it’s just like the regular pizza pie you’re used to eating and enjoy, but tastier and better for you. This sweet potato crust pizza has more fiber, beta carotene and vitamin A in the crust than your regular pizza, while still maintaining the delicious flavor.

We love this pizza because you can truly make it your own. Add your favorite toppings in addition to the ones we’ve added- like organic chicken or sausage, your favorite veggies and more. PS- you can also eat this pizza for any meal… breakfast, lunch or dinner.

Sweet Potato Crust Pizza

Makes:2-4 servings

Ingredients:

For the base:

  • 1 large sweet potato, peeled and chopped
  • 2 cups oat flour (you can buy this or make from rolled oats)

For the toppings:

  • 2 tbsp tomato puree
  • 1 cup spinach
  • 1 red onion, sliced
  • 3 shiitake mushrooms, sliced
  • 1 red pepper, sliced
  • 2 garlic cloves, diced
  • pinch of salt & pepper
  • 2 tsp Italian herbs (oregano, parsley—or your other favorites!)
  • 1 tsp chili flakes
  • 2 tbsp olive oil

Directions:

    1. Preheat oven to 400 degrees Fahrenheit and line a large baking tray with parchment paper.
    2. Cook the sweet potatoes in a steamer (or boil) for 20 minutes until soft.
    3. Transfer the soft sweet potato to a mixing bowl and mash. Then add oat flour and mix with a wooden spoon until well combined into the dough.
    4. Prepare a little water in a small bowl and use it to wet your hands, then shape the sweet potato dough into a ball and place it on the lined baking tray (dipping your hands in the water will make it easier to shape the dough without it sticking to your hands!).
    5. Shape the dough into a circle roughly ½ inch thick and smooth it out around the edges.
    6. Bake the dough in the preheated oven for 15-18 minutes or until the edges are slightly browned.
    7. Meanwhile, prepare the toppings by mixing together (veggies of your choice) the onion, pepper, mushrooms, garlic, salt, pepper, Italian herbs, chili flakes and olive oil until the veggies are fully coated in the seasoning.
    8. Once the dough has finished baking, remove from the oven and spread the tomato puree on top followed by a layer of spinach. Then, start layering your choice of veggies on the pizza.
    9. Place the tray back into the oven and continue to bake the pizza for another 8-10 minutes or until the veggies are soft.
    10. Remove the pizza from the oven and allow to cool for 5 minutes or so, then slice and serve!
