Ive been doing a lot of experimenting with quick and easy desserts and this one TOTALLY rocked my taste buds. Many of the 1-minute cakes can be loaded with sugar, eggs, and other things that make quick and easy assembly a little more difficult.

What I really love about this recipe is that you can make it on the fly, and it comes out great. What I didn’t do when making it, but that you could do, is add an ice cream or a topping on top to make it extra creamy. I just kept it the way it was- not creamy, just super rich and delicious.

For some extra chocolatey taste, add some chocolate chips or MORE cocoa powder. YUM!

This yummy dessert is easy to make and is also a perfect snack. Top with your favorite ice cream or whipped cream.

Ingredients

  • 1/2 Tbsp almond butter, melted
  • 1/2 Tbsp coconut oil, melted
  • 2 Tbsp canned pumpkin
  • 1 tsp vanilla extract with stevia
  • 1 Tbsp almond milk
  • 1 Tbsp coconut flour
  • 1 tsp cocoa powder
  • 1 Pinch baking powder
  • 1/2 Tsp Apple cider vinegar

Instructions

  • In a glass dish melt the coconut oil and almond butter- stir together 
  • Add the rest of the ingredients and mix until homogenous
  • Pour the ingredients into a lightly greased ramekin
  • Microwave the ramekin for 60-90 seconds - then allow to cool before eating
  • Top with your favorite toppings and enjoy!
