Simple Shepherds Pie {Gluten free, Nightshade Free, Dairy free, Whole 30, Paleo}

I love comfort food.

Especially when it’s re-written a little bit, makes my body feel good, and I can still enjoy making it in under 30 minutes (DREAM recipe right there!)… which is exactly what I did with this recipe.

As a child I grew up eating recipes much like this one- classic comfort foods; however, then I had frequent stomach aches, and now I’m working on getting fewer of them, which means I need to re-work many of my recipes.

Last weekend I was searching for a tasty, decadent meal and decided I wanted a casserole and this was the dish I was going to make. Even to my surprise this recipe turned out WAY BETTER than even I could have guessed. So I want to share with you guys so that you too can make it.

This Simple Shepherds pie is allergy friendly, and friendly for many of you with sensitivities. Feel free to add your own adjustments too if there’s a way that it will work for you even better (even if you just add more veggies than I even did!).

Simple Shepherds Pie

Hello comfort food! We love our simple rendition on this classic dish.

Ingredients

  • 1 tbsp olive oil
  • 1 cup carrots, chopped
  • 1 medium yellow onion, chopped
  • 1/2 cup peas (optional and frozen)
  • 3 cloves garlic, chopped
  • 2 lbs ground turkey
  • 4 sprigs bay leaf
  • 1 tsp onion powder
  • pinch salt
  • pinch pepper

For the cauliflower topping

  • 2 heads cauliflower, steamed
  • 1 tbsp coconut oil
  • 1 clove garlic, minced
  • dash pepper
  • dash salt

Instructions

  • Preheat the oven to 400 degrees
  • Wash and prepare ingredientsI
  • In a large skillet heat the oil, and add the carrots- cook until soft (about 5-7 minutes)
  • Next add the onion and cook until soft- about 7-10 minutes, add the frozen peas about mid way through this process
  • Once the carrots etc are cooked, add the bay leaf, the turkey and the rest of the salt/seasoning and cook until meat is cooked through (about 10 minutes)
  • While the meat is cooking, steam the cauliflower
  • Once the cauilflower is steamed, add to a food processer with the rest of the topping ingredients and blend until smooth
  • Once the turkey mixture is cooked remove from heat
  • Spray a 9 x 9 pyrex dish or other with olive oil spray or rub with olive oil
  • Add the turkey mixture in first, and then the cauliflower whip on top and spread evenly
  • Cook at 400 for 20 minutes, then broil for 7 minutes or so until browned
  • Remove from oven, serve and enjoy
