Coconut Chicken “Nuggets”

Yay for elevated comfort food!

Chicken nuggets can be a real comfort food and remind me of my childhood. These chicken “nuggets” are an elevated version with coconut to boost the flavor profile, make it more luxurious, or make you feel like you’re on vacation! But what I love most about this recipe is that I’m not going to feel like sh** after eating them. 

These coconut chicken “nuggets” are paleo and autoimmune diet protocol approved, meaning they are free of major allergens like gluten, dairy, soy, eggs, nuts, and seeds, resulting in you eating these flavorful “nuggets” guilt-free and your body thanking you afterward (we don’t want any constipation, joint pain, fatigue, etc. here!). 

Now, you may be hesitant to try this recipe as coconut can sometimes get a bad rap; however, there are numerous health benefits associated with coconut – my take is just to have it in moderation and not overdo it! Some health benefits of coconut include: good for gut health as it has around 7 grams of fiber per cup, contains medium-chain triglycerides, which are easy to digest and also can boost cognitive function, and may be anti-inflammatory given its antioxidant profile.

Now, moving on to why you’re here – the recipe!

Coconut Chicken “Nuggets”

Ingredients

  • 2 chicken breasts
  • 2 tbsp apple cider vinegar (ACV)
  • 1 cup lite canned coconut milk
  • 1.5 cups finely shredded coconut
  • 1-2 tsp garlic powder
  • 1-2 tsp onion powder
  • 1-2 tsp parsley
  • salt and pepper to taste

Instructions

  • Cube chicken breasts
  • Pour 2 tbsp of ACV and one cup of coconut milk in large bowl
  • Place cubed chicken breasts in ACV and coconut milk mixture; letting sit for 30 minutes
  • Preheat oven to 400 °F
  • Pour 1.5 cups of coconut shreds into a different medium-large bowl
  • Add spices to coconut shreds and mix
  • Dip cubed chicken breasts in coconut shred and spice mixture, making sure to coat all sides
  • Place chicken "nuggets" on parchement paper baking sheet
  • Bake for 25 mins flippping halfway through
  • Eat and enjoy!
